Memorial Day. It's a three-day weekend that we often celebrate by pulling out the grill, having family or friends over, or catching a local parade. This is an easy-to-throw together warm winter meal that uses ingredients I often have on hand. It can be frozen before baking as well. Serve with a salad and a loaf of bread, and you’ve got a great Italian meal with little effort.
Chicken Tetrazzini
4 oz. spaghetti
2 ½ c. cooked, diced chicken
½ cup finely chopped onion
